Amazing Grilled Artichokes

When I get artichokes at restaurants, they always taste amazing. I've never been able to replicate it at home. They would always taste like bland, boiled nothingness. Until we started using artichokes from the farmers market AND using this recipe.


The grilling takes it to a whole different level and they taste SO good.

Ingredients:

  • 4 Large Globe Artichokes (preferably fresh from the farmer’s market within 1-2 days)

  • 1 Organic Lemon, cut into wedges

  • 1 Large Clove of Organic Garlic

  • 1 Bay Leaf

  • 1 Tbsp Chopped Fresh Herbs: Rosemary, Thyme or Oregano (may use 1 or all 3)

  • ½ Cup Organic Extra Virgin Olive Oil

  • Sea Salt to taste

  • Optional: Melted Butter (we love Kerrygold), Mayo (we love primal kitchen) or Aioli for serving

Directions:

  1. Fill a large stainless steel pot with an inch of water at the bottom. Add in the garlic and bay leaf. Heat the water on high on the stove while you prepare the artichokes.

  2. Get a steamer basket that fits in the pot and set out next to a cutting board to place the artichokes into as you prep them. Also cut up your lemon into wedges and have next to the cutting board as well.

  3. To prepare the artichokes, remove the lower tough leaves on the outside of the artichoke. Then trim the stems to 2 inches from the base of the artichoke. Cut off the top ½ inch of the artichoke and then cut the artichoke in half.

  4. Then use a spoon to scoop out the fuzzy chokes and the small inner artichoke leaves.

  5. Rub lemon juice all over the inside and exposed cut areas of the artichokes because they will start to brown very quickly. Then sprinkle both sides of the artichoke with salt. Once you have prepared each artichoke half, place the cut side down in the steamer basket and layer the artichokes so they all cook evenly as they steam.

  6. Heat up the grill to high heat right as you start the timer to steam the artichokes. That way the grill is hot when it comes time to grill them.

  7. Note: if you don’t have a grill, you could try putting the artichokes under the broiler in the oven for 3-5 minutes after steaming.

  8. Steam the artichokes for 15-20 minutes until you can easily pull off an outer leaf. They don’t have to be cooked all the way through because they will continue to cook on the grill.

  9. While the artichokes are steaming, combine the herbs and olive oil in a bowl and set aside.

  10. Remove the artichokes and place on a baking sheet. Brush each artichoke with the olive oil mixture on both sides and sprinkle all over with salt.

  11. Place the artichoke halves cut-side-down on the grill. Cover and grill for 5-10 minutes until there are grill marks on the cut sides of the artichokes.

  12. Serve immediately with melted butter, mayonnaise or aioli.
