VIllage’s Sizzling Fajitas
Serves 4
Ingredients
1 1/4 lb boneless skinless chicken breast, sliced thin
3 bell peppers, sliced
1 large onion, sliced
1 tbsp olive oil
Juice of 1 lime
1 tsp chili powder
1 tsp cumin
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp oregano
3/4 tsp kosher salt
1/4 tsp black pepper
Optional for serving
Salsa
Cilantro
Lime wedges
Lettuce cups or small corn tortillas
Greek yogurt
Instructions
In a large bowl, toss the chicken with half the lime juice, the spices, salt, pepper, and 1/2 tbsp olive oil.
Heat a large skillet over medium-high heat.
Add the chicken and cook for about 4–6 minutes until cooked through. Remove to a plate.
Add the remaining 1/2 tbsp olive oil, peppers, and onion. Cook 6–8 minutes until tender and slightly charred.
Add the chicken back in and squeeze in the rest of the lime juice. Toss together for 1 minute.
Serve with salsa, cilantro, and extra lime.
