Spicy Ginger Coconut Soup
Ingredients:
2 chicken breasts, cubed
1 red pepper, cubed
1/2 onion, sliced thinly
2 tbsp ginger, minced
2 cloves garlic, minced
2 tbsp thai curry paste
1 jalapeno or serrano, deseeded and sliced thinly
4 cups chicken broth
1 can full fat coconut milk
1 tbsp coconut oil
2 tbsp fish sauce
2 tbsp coconut aminos
2 tbsp lime juice
Basil and cilantro, chopped for topping
Instructions:
In a sturdy pot or dutch oven, heat the coconut oil on medium.
Add onions and sautée until softened, about 5 minutes.
Add ginger, garlic, and curry paste. Sautée for another 2 minutes while stirring continously.
Add chopped peppers, chicken, and chicken broth. Bring to a low boil for about 7 minutes, uncovered.
Add fish sauce, coconut aminos and lime juice. Add more of these ingredients to taste- if it needs more salt (fish sauce), zing (lime juice), or sweetness (coconut aminos).
Serve over rice, cauliflower rice, or with roasted veggies such as cauliflower and top with herbs.
