Spicy Ginger Coconut Soup

Ingredients:

  • 2 chicken breasts, cubed

  • 1 red pepper, cubed

  • 1/2 onion, sliced thinly

  • 2 tbsp ginger, minced

  • 2 cloves garlic, minced

  • 2 tbsp thai curry paste

  • 1 jalapeno or serrano, deseeded and sliced thinly

  • 4 cups chicken broth

  • 1 can full fat coconut milk

  • 1 tbsp coconut oil

  • 2 tbsp fish sauce

  • 2 tbsp coconut aminos

  • 2 tbsp lime juice

  • Basil and cilantro, chopped for topping

Instructions:

  1. In a sturdy pot or dutch oven, heat the coconut oil on medium.

  2. Add onions and sautée until softened, about 5 minutes.

  3. Add ginger, garlic, and curry paste. Sautée for another 2 minutes while stirring continously.

  4. Add chopped peppers, chicken, and chicken broth. Bring to a low boil for about 7 minutes, uncovered.

  5. Add fish sauce, coconut aminos and lime juice. Add more of these ingredients to taste- if it needs more salt (fish sauce), zing (lime juice), or sweetness (coconut aminos).

  6. Serve over rice, cauliflower rice, or with roasted veggies such as cauliflower and top with herbs.
