The Best Tuna Salad Wrap

Serves: 4

Ingredients:

  • 2 5 oz cans of tuna

  • 1/4 cup homemade or avocado oil mayonnaise

  • 1/2 tablespoon dijon mustard

  • 1/4 cup celery or peppers, finely chopped

  • 2 tbsp onion, minced

  • Salt and freshly ground black pepper to taste

  • Shredded cabbage, carrots, peppers, etc

  • Lemon juice and salt for your shredded veggies

  • 4+ Large collard green leaves, for wrapping

Procedure:

  • In a medium bowl, add all ingredients and mix well. Add more mayo if the salad seems too dry, add more dijon if you want more of a kick.

  • Refrigerate before serving.

  • Shred other veggies and mix with a squeeze of lemon and salt to taste.

  • Serve inside a collard green wrap with other shredded veggies to bulk it.

Note: add avocado, chickpeas, pickled onions, jalapeños, etc to make this a more satisfying meal.
